TIRAMISU- A little taste of Italy... Ingredients: 2 x 250gms Mascarpone Cheese 5ozs Sugar 5 Eggs 2 pkts Sponge Fingers Coffee & Chocolate powder Marsala Wine, Amaretto, Port or Tia Maria (To suite your taste)
Method: Separate yolks and egg whites, make two large mugs of strong coffee; allow to cool add liqueur or wine. Whisk yolks and sugar until fluffy, whisk mascarpone cheese until smooth in separate bowl and add to yolks and sugar.
Whisk egg whites until you can turn bowl upside down without mixture falling out!, fold into yolks, sugar and mascarpone cheese. Dip finger sponges in coffee and liqueur and make first layer in a dish, cover with cream mixture layer on top, follow with second layer of soaked sponge fingers and cover with remainder of cream. Sprinkle with cocoa or chocolate powder, place in fridge overnight or at least 2 hours.
BANOFFEE ICECREAM- Iced Taboo ... Ingredients: 4 Eggs. 3 ozs. Castor Sugar. 1 Pint Double Cream. 1 Tin condensed milk. 1 tspn instant coffee 1 tspn ground coffee
Method: Place unopened tin of condensed milk in saucepan of water and boil for 3 hrs. Whip sugar and eggs until thick and creamy, whip cream until stiff - mix together and add the tin of condensed milk ( having boiled for 3 hrs unopened in water) Add 1 teaspoon of instant coffee, 1 teaspoon of ground coffee and 3 mashed bananas, mix well and freeze.
SANGRIA- The drink of Summer from Spain ... Ingredients: 1 Bottle Red Wine dry & full bodied 1 Glass of good Spanish Brandy. 1 Glass Cointreau White lemonade to taste Juice of two limes Slices of orange, apple, lemon any fruit of your choice.
Method: Make the day before and marinate overnight. Mix all the ingredients together (without the fruit) in a non metallic bowl put in chillier or fridge. Serve very cold with ice - add small portions of fruit to taste.
